Last week I flew to Chicago (for the first time!) with Randalls and Albertsons to learn about the O Organics® brand. O Organics is exclusive to the Albertsons family of stores with more than 300 USDA Certified items – this includes fresh vegetables and fruits, dairy and meats, cereals, snacks, and more. I love the O Organics brand because the products are high quality but are offered at a value. Albertsons believes (and I believe) everyone should have the opportunity to go organic!

We started the morning off with overnight oats breakfast bar where you could customize your own overnight oats with toppings like coconut flakes, chia seeds, walnuts, silvered almonds, strawberries, and blueberries. I loved the strawberry overnight oats. With a room full of bloggers – you knew tables would be moved, chairs would be stood on, and plenty of cameras would be clicking away.

Albertsons Companies’ Registered Dietitian and Nutritionist Annessa Chumbley demoed a couple easy and healthy recipes with O Organics products. Make protein pancakes in advance by freezing them and then defrost for a quick breakfast during the week. For fast and easy meatloaf, use a cupcake tin to create muffin tin meatloaves. One pot pastas like her one pot penne are lifesavers during a busy week when you still want to eat healthy.
We were then released into the kitchen to play with O Organics ingredients and create a dish of our own. I teamed up with Love & Lemons and Edible Perspective to create a veggie potato hash.
Viola! Our yummy potato hash with bell peppers and chickpeas. Finished with spinach, and fresh thyme and chives. I’ll definitely be recreating this at home.
Oh, Lady Cakes and A Brown Table created this beautiful berry crumble that I’m hoping will be posted on their blogs.
We lunched on Mexican kale salad, roasted chickpeas, and pork vermicelli wraps. I discovered a new favorite, the O Organics organic guava kombucha.

A couple of things I grabbed: O Organics organic instant oatmeal, tomato basil soup, butter popcorn, white cheddar popcorn, strawberry cereal bars, and potato chips.
The Albertsons Companies Organic For All™ event ended with a relaxing yoga session of stretching and breathing.
I’m all about quick and easy meals during the week so I had to recreate the overnight strawberry oats. You might remember my Chocolate Covered Strawberries Overnight Oatmeal, but this overnight oats was much more creamier. The secret? Coconut milk.
