Jamie Rice, owner of food truck Taco Baby, and husband Jeremy Farmer, founded the festival in 2022 after their home was damaged from a tornado that ravaged Round Rock and surrounding areas of Williamson County. After spending a day at the pumpkin patch, I’ve been craving cozy fall dishes so I made this butternut squash pasta by roasting butternut squash in the oven with salt, pepper, and chili flakes with a pumpkin and butternut squash cream sauce. Even the butternut squash pasta is shaped like pumpkins too!
I opened up a bottle of Riondo Prosecco to enjoy while I cooked and then to enjoy with the bowl of butternut squash pasta. The light, fresh, and fruity taste of Riondo cuts through the creamy butternut squash making it a great fall pairing!
Riondo is an authentic Italian prosecco and I love their signature twist-off cap which makes it easy to enjoy a bottle of Riondo over several days – no re-corking required! I poured myself a glass and put the bottle back in the fridge to enjoy later this week.
